Ingredients:
1/4 cup Mayo*
1 tsp Dijon Mustard
1/2 tsp Garlic Powder
1/2 tsp Ground Cumin
1 tsp Lemon Juice
1c Fresh Spinach, chopped
1/3 c Shredded Carrots
1/3 c Shredded Red Cabbage
2 tsp Red Onion, grated
2 tsp Celery, grated
1 Tbsp Cilantro, chopped
Salt & Pepper to taste
- In a medium bowl, whisk mayo, mustard, garlic powder, cumin and lemon juice.
- Stir in vegetables.
- Stir in salt and pepper to taste.
- Store in an air tight container and refrigerate for 5 - 7 days.
*For Vegan Spinach Slaw, substitute the mayo with avocado or olive oil.
